
Keith’s Canned Fire Sauce
Super spicy green sauce to save for a rainy day.
Ingredients
- 2 lbs Tomatillos or green tomatoes may be used
- 10 oz Whole jalapeños stems removed
- 1.7 lbs Quartered onions
- 6 cloves Garlic
- 1 cup Bottled Lime Juice
- 1 Tbsp Salt
- 1 tsp Black Pepper
Instructions
- Put all veggies on a baking sheet and roast in the oven at 450 degrees for 7 min.
- Stir and roast for another 7 min until softened and lightly charred.
- Transfer all veggies to a blender and blend until smooth.
- Pour sauce into a large saucepan and stir frequently over high heat until sauce begins to boil.
- Reduce heat and simmer for 20 minutes, stirring occasionally.
- Ladle hot sauce into pint jars and process in a boiling-water canner for 20 minutes.
Notes
CAUTION: Wear plastic or rubber gloves and do not touch your face while handling or cutting hot peppers. If you do not wear gloves, wash hands thoroughly with soap and water before touching your face or eyes.
