Golden Salsa Recipe

This fresh recipe is perfect for those summer garden tomatoes!

Equipment

  • Vidalia Chop Wizard
  • Food Processor or a blender

Ingredients
  

  • 8 Yellow Lemon Boy Tomatoes Red tomatoes are great also!
  • 1 Onion
  • 2 Anaheim Peppers
  • 4 tsp Crushed Garlic
  • 4 Serano Peppers Without seeds and veins if you want it mild
  • 1 cup Fresh Cilantro
  • 2 tbsp Fresh Lime Juice
  • 2 tbsp Vinegar Optional
  • 4 tsp Salt

Instructions
 

  • Use your Vidalia Chop Wizard with the smallest insert to chop tomatoes, onion, and Anaheim peppers and combine in a small mixing bowl.
  • Add chopped garlic.
  • Remove the seeds and from the sereno peppers, and finely chop in a mini food processor. Add to mixing bowl. (You can keep the seeds and veins to add later if you want more heat.)
  • Chop the cilantro and add to the mix.
  • Add lime juice, vinegar, and salt and stir together. 
  • Blend 1/4 of the salsa mix for a smoother texture and marrying of flavors. 
  • Enjoy with your favorite tortilla chips!
  • This will keep in the fridge for about 1 week.
