Golden Salsa Recipe

This fresh recipe is perfect for those summer garden tomatoes!

- 8 Yellow Lemon Boy Tomatoes Red tomatoes are great also!
- 1 Onion
- 2 Anaheim Peppers
- 4 tsp Crushed Garlic
- 4 Serano Peppers Without seeds and veins if you want it mild
- 1 cup Fresh Cilantro
- 2 tbsp Fresh Lime Juice
- 2 tbsp Vinegar Optional
- 4 tsp Salt
Use your Vidalia Chop Wizard with the smallest insert to chop tomatoes, onion, and Anaheim peppers and combine in a small mixing bowl. Add chopped garlic.
Remove the seeds and from the sereno peppers, and finely chop in a mini food processor. Add to mixing bowl. (You can keep the seeds and veins to add later if you want more heat.)
Chop the cilantro and add to the mix.
Add lime juice, vinegar, and salt and stir together.
Blend 1/4 of the salsa mix for a smoother texture and marrying of flavors.
Enjoy with your favorite tortilla chips!
This will keep in the fridge for about 1 week.
